Orange Glazed Ginger Beef

Ingredients:
1/4 cup soy sauce
2 tablespoons frozen orange juice concentrate
1 teaspoon ground ginger
1 teaspoon orange zest (optional)
2 tablespoons cornstarch
1 lb lean beef, cut into strips (sirloin, flank, top round)
1 tablespoon vegetable oil
2 cups broccoli florets (fresh or frozen)
1 onion, cut into thin strips
1 (14 1/2 ounce) can beef broth
hot cooked rice
Directions:
1. In large bowl, combine soy sauce, orange juice concentrate, cornstarch, ginger, and orange peel.
2. Stir to dissolve cornstarch.
3. Marinate beef strips in this mixture for at least 30 minutes.
4. Meanwhile, in large skillet (or wok), cook and stir broccoli and onion in oil until tender-crisp.
5. Remove vegetables from skillet.
6. Drain beef, reserving marinade.
7. In same skillet, over medium-high heat, cook and stir beef for 3 to 4 minutes until browned.
8. Remove from skillet.
9. Add reserved marinade and broth to skillet, letting boil 5 minutes.
10. Add beef and vegetables to sauce.
11. Heat through.
12. Serve over rice.
