Orange Ginger Stir Fry

Ingredients:
1 lb chicken breast, thinly sliced
2 tablespoons corn starch
2 tablespoons vegetable oil
1 red bell pepper, sliced
1/2 red onion, thinly sliced
1 cup broccoli, cut into bite size pieces
24 grams (2 segments) mandarin orange segments
4 cups cooked jasmine rice
1/2 cup (fusia) orange ginger wok sauce
Directions:
1. In a large mixing bowl, lightly coat the chicken slices with corn starch.
2. Heat the oil in a large wok or frying pan to high heat. Stir fry the chicken until golden brown on both sides (about 3 minutes).
3. Remove the chicken to a side dish; stir fry the peppers and onion until golden. Add the broccoli, orange segments, chicken and sauce to the pan.
4. Reduce heat and simmer until heated.
5. Serve over cooked jasmine rice.
