Orange-Ginger-Chicken Slaw

Ingredients:
1 (10-ounce) package angel hair slaw (about 6 cups)
1 (9-ounce) package frozen cooked chopped chicken breast, thawed
1 cup matchstick-cut carrots
3/4 cup orange juice
1/4 cup low-sodium soy sauce
2 tablespoons honey
2 teaspoons grated peeled fresh ginger or 2 teaspoons ground ginger
1 1/2 teaspoons sesame oil
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
6 tablespoons honey-roasted peanuts, coarsely chopped
Directions:
1. Combine first 3 ingredients in a large bowl.
2. Combine orange juice and next 6 ingredients in a small bowl, stirring with a whisk. Add orange juice mixture to slaw mixture; toss gently. Spoon salad into individual shallow bowls. Sprinkle evenly with peanuts.
