Orange Ginger Chicken

Ingredients:

Directions:

  1. Season chicken and coat with a little flour.
  2. Melt butter and oil over medium heat.
  3. Saute chicken until brown for approximately 3 minutes per side.
  4. Put on a plate.
  5. Add ginger; stir 1 minute.
  6. Add brown sugar and mustard and stir to blend.
  7. Add juice and zest.
  8. Simmer until slightly reduced which takes about 5 minutes.
  9. Add chicken and simmer 3 minutes.
  10. Turn chicken and add onions and simmer a couple of minutes.
  11. Season again to taste.
