low fat fruit flax muffin
Ingredients:
1 cup whole wheat flour
1/4 cup wheat bran
1/3 cup ground flaxseed
2 tsp. baking powder
1 tsp. baking soda
1 orange
1/2 cup egg whites
1/2 cup milk
1 cup blueberries
Directions:
1. mix first 5 ingredients and stir. add 1 tsp. cinammon if desired and 2 tbsp. splenda granular sugar substitute ( no calories ).
2. place liquid ingredients into food processor and add whole orange cut into six pieces in also. Process till well blended. Add liquid to dry and stir gently. Fold in blueberries. Spray muffin cups and divide batter evenly. Bake at 375 for 20-25 min.
3. Cool on wire rack
