Orange-apricot Sherbert

The orange and apricot flavors compliment each other in the creamy sherbert. You will not want to share this one!
Ingredients:
1 cup light cream
1 cup sugar
3/4 cup corn syrup
1 cup canned apricot nectar
1 cup orange juice
1/4 cup fresh lemon juice
2 tsp grated orange rind
1 tsp grated lemon rind
2 egg whites
Directions:
1. Combine cream, sugar and corn syrup in saucepan.
2. Heat ot scalding.
3. Remove from heat and cool.
4. Stir in apricot nectar, orange juice, lemon juice, orange and lemon rind.
5. Put into a metal pan and freeze untl firm.
6. Beat egg whites until stiff. Put frozen sherbet in chilled bowl and beat unti fluffy(work quickly so sherbet doesn't melt).
7. Fold in egg whites.
8. Return to pan and freeze until firm.
