Orange And Date Nut Bread

This is my favortie date bread hands down. I love the orange in the recipe and the mellow flavor. I've been told my recipe is outstanding. Even date haters enjoy this!
Ingredients:
1 medium orange ( wash skin )
1 cup soft pitted packaged dates
2 tbs. margarine melted
1 tsp pure vanilla extract
1 large egg, fork beaten
2 cups flour
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup sugar
1/2 cup chopped walnuts or pecans
Directions:
1. Grate the rind from the orange .
2. Squeeze juice into a measure cup adding boiling water to measure 1 cup.
3. Chop dates in a food processor into small bite size pieces.
4. Combine dates, rind and liquid.
5. Stir in melted margarine,vanilla, egg and blend well.
6. Combine flour, salt, baking powder and soda and beat well into date mixture.
7. Stir in nuts.
8. Bake in a greased and floured and wax paper lined pan ( 9 x 5 loaf ) and bake 350F 45 minutes or tested done with wooden toothpick.
9. Remove from pan and cool well.
10. Wrap and let sit overnight. Slice the next day.
11. We eat it plain for breakfast but adding a cream cheese spread makes it even more special.
12. I often bake many of my quickbreads in those disposable French style wood bread pans found at specialized kitchen stores..
13. Bread freezes well.
