Orange and Chocolate Mini Loafs

You can make this as mini muffins, a big loaf pan or however you would like to use as a baking pan.
Ingredients:
1/2 cup canola oil
3/4 cup sugar
2 eggs
zest of two orange
1/2 cup whole wheat flour
1 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup squeeze orange juice
3 ounces soymilk
1 teaspoon vanilla
1 cup chocolate chips
Directions:
1. Preheat oven to 350°F Butter and flour the mini loaf pan.
2. In a bowl mix oil, sugar, eggs and orange zest. Add soy milk, vanilla and orange juice.
3. Add flour, baking soda, baking powder and chocolate chips. Mix well.
4. Bake for 25-30 minute.
5. Let cool 5-10 minutes and take mini loafs onto a wire rack for 30 minutes.
