Serves 25-30 people or you for 3 weeks. Origin from Louisiana. Great to snack on with soda crackers. Ingredients:
3 lbs cabbage, sliced thin |
2 -3 medium onions, sliced thin |
1 -2 large bell pepper, sliced thin |
6 stalks celery, sliced thin |
2 tablespoons celery seeds |
2 cups sugar |
1 cup oil |
1 cup cider vinegar |
2 tablespoons salt |
1 tablespoon sugar |
Directions:
1. It helps to use a food slicer to make thin slices (not Grated). 2. Quarter the Bell Pepper and the Cabbage prior to slicing. 3. 1/2 the onion prior to slicing. 4. Slice the Celery standing on end across the slicer. 5. Put ingredients in a large container and put the Celery seeds over the top of the vegetables. 6. Put oil in a sauce pan with cider vinegar, salt, sugar. 7. Bring just to a boil and then pour over veggies and stir. 8. Store in Refridgerator. Gets better as it ages up to 3 weeks. 9. Let stand 24 hours before serving. 10. Will keep refrigerated 3 weeks. |
