Open Sandwich - Tomato, Sardine, & Rocket

This is wonderful! We made this one Sunday evening, when we didn't have any energy. I enjoyed it thoroughly as I love sardines! Found in Good Food Magazine, August 2008.
Ingredients:
2 baguette or 2 seven-grain bread or 2 slices jewish rye bread, sliced thick
2 garlic cloves
2 ripe tomatoes
8 1/2 ounces sardines (a good quality packed in olive-oil)
1/4 cup thinly sliced red onion
rocket
Directions:
1. Toast the bread.
2. Cut the garlic cloves in half and rub the cut side over the surface.
3. Halve the tomatoes and squeeze and rub the flesh over the bread.
4. Top with rocket, sardines, and onions or top with sardines & onions & then with rocket.
5. Serve with an ice cold beer.
