Open Faced Shrimp Salad Sandwich

Love this shrimp salad sandwich, with melted gruyere cheese! MMM From a local news program. I use a nice, thick-sliced sourdough, wheatberry, or other bread from the bakery in the grocery store.
Ingredients:
1 lb. cooked shrimp, roughly chopped
1 cup celery, chopped
1/3 cup sweet onion, finely chopped
1/2 cup mayonnaise
1 tsp. greek seasoning
1/8 tsp. salt
1/2 tsp. pepper
2 tablespoons freshly squeezed lemon juice
1/4 tsp. lemon zest
1/2 lb. gruyere cheese, sliced
4-6 slices of bread, each slice about 1 thick
Directions:
1. Combine shrimp, celery, onion, mayonnaise, Greek seasoning, salt, pepper, lemon juice, and lemon zest in a bowl.
2. Spoon shrimp salad on bread slices and top with slices of Gruyere cheese.
3. Place sandwiches on a baking sheet.
4. Cook in a preheated 350 degree oven for about 20 minutes or until the cheese is melted and bread is toasted.
5. Serve while warm.
