A quick and easy tofu vegetarian sandwich that is about the same calorie count as a Sub. If you use olive oil to cook the spinach you add calories. You can substitute the veggies and bread with whatever you have on hand. The tofu and cheese give you some protein.
Ingredients:
2 bagel
1/4 bell pepper
4 slice cheese
1 cup tofu
1 cup spinach
1/2 cup garlic
1 tbsp olive oil
Directions:
1. Toast half a bagel.
2. Steam fry spinach and bell pepper.
3. Mix soft tofu with roasted garlic, salt and pepper, and spread on bagel.
4. Spread spinach and bell pepper on bagel.
5. Lay cheese on top.
6. Toast until cheese is melted in oven.
