This recipe comes from my good friend Thom who is the most incredible baker. He always sends this cake to folks whey they are sick or celebrating something. I was fortunate enough to inherit 2 of these on Valentine's day. Read more .....thank you Thom.....incredible.....enjoy
Ingredients:
3-1/2 sticks butter at room temperature
1-3/4 cups granulated sugar
6 eggs
2 cups powdered sugar
2-1/4 cups all purpose flour
3/4 cup unsweetened cocoa
2 cups chopped walnuts
glaze
3/4 cup powdered sugar
1/4 cup unsweetened cocoa
3 tablespoons milk
Directions:
1. Adjust oven rack to middle position and preheat oven to 350.
2. Butter a tube pan then dust with flour and shake out any excess.
3. In large bowl using electric mixer beat butter and granulated sugar until light and fluffy.
4. Add eggs 1 at a time beating well after each addition.
5. Gradually add powdered sugar beating until combined.
6. Using spoon stir in flour, cocoa and nuts then mix until combined.
7. Scrape batter into prepared pan and spread it evenly then bake 55 minutes.
8. Transfer pan to a wire rack to cool for 1 hour.
9. Invert onto a serving plate and set aside to cool completely.
10. To make glaze combine powdered sugar, cocoa and half of the milk.
11. Mix until blended adding some of the remaining milk 1/2 tablespoon at a time until spreadable.
12. Spoon glaze over top of cooled cake allowing some to run down the sides.
