This rich-tasting but low-fat drink features oolong tea, a lightly fermented tea, the best of which comes from Taiwan. From Cooking Club of America.
Ingredients:
4 cups water
2 tablespoons lightly packed oolong tea leaves
1 cup fresh mint
2 cups peach nectar
3 tablespoons sugar
1/2 teaspoon vanilla
fresh peach, wedges
fresh mint sprig
Directions:
1. In medium saucepan over medium heat, bring water to just below a simmer (190ºF.). Remove from heat. Add tea and 1 cup mint; let steep 3 minutes.
2. Strain tea. Add peach nectar, sugar and vanilla; mix well. Refrigerate until chilled. Serve garnished with peach wedges and mint sprigs.
