real onion soup,very hot gives real appetite for more
Ingredients:
6 big onions (3 red-3 white)
1 clove garlic pressed
1 l water
2 meat cubes (for broth)
250gr butter
1 glas dry white whine
4 slices old bread (1 cm each)
shredded cheese ( any kind if old)
pepper, salt to taste
Directions:
1. heat oven to 225 C
2. TRIC: clean the onions and put all peelings in a pan with the water
3. on low heat cook 20 min
4. Put through a strainer and keep the beautiful brown onion broth
5. Melt butter in a frying pan
6. Slice the onions
7. Saute onion slices in the butter ca 30 min on low heat in closed pan till soft and done
8. Add a pinch of salt after 25 min
9. Add whine and cook on high till alcohol is gone
10. Add onion broth rtilltill onion slices covered + 1 cm
11. Add cubes
12. Cook 20 min on low closed pan
13. Put shredded cheese on bread slices and cook in the oven 5-10 min till cheese bubbles
14. Put bread slices in 4 soup bowls and fill up with onion soup
