This is my new favorite recipe. I found it in 2001 TOH Quick Cooking Cookbook. The recipe is from Claudine Moffatt of Manchester, Missouri. This comfort food recipe is quick to prepare and very satisfying for the whole family. I changed the original recipe to include onion soup mix.
Ingredients:
1 lb lean ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1 (1 1/4 ounce) envelope onion soup mix
4 slices bread, toasted
1/4 cup all-purpose flour
1 1/2 cups water
1 tablespoon beef bouillon granules
Directions:
1. Shape the beef into 4 oval patties. Season each side with salt, pepper and 1/2 tsp onion soup mix. In a skillet, brown patties on one side, then turn and add onions. Cook until meat is no longer pink. Place toast on serving plates. Top each with onions and a beef patty; keep warm. Stir flour and remaining onion soup mix into skillet until blended. Gradually add water; stir in bullion. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Serve over meat and onions.
