Onion Roasted Veggies With Lemon And Parsley

A spin on onion soup mix roasted potatoes ... the carrots and pepper carmelize beautifully and the parsley and lemon liven it all up. Wonderful! I can't imagine roasting the potatoes plain again! A perfect companion to grilled chicken . Read more ... or even solo, as a vegetarian main dish.
Ingredients:
1 envelope onion soup mix
1 lb all-purpose potatoes, unpeeled, cut into large chunks
1 lb baby carrots
1 large red bell pepper, cut into chunks
scant 1/3 cup extra-virgin olive oil
juice of half a lemon
2 tablespoons chopped fresh parsley
generous grinding of black pepper
sprinkling of salt (i used smoked sea salt)
Directions:
1. Preheat oven to 425°. Combine all ingredients in a large bowl; toss to mix and coat veggies well.
2. Spray large cookie sheet or 9x13 pan with nonstick spray; pour veggie mixture out evenly on pan.
3. Bake, stirring every 10 minutes, 40 minutes or until potatoes are tender and other veggies are somewhat carmelized.
