This is one of my favorite hors d'oeuvres. Normally I make them as rounds, but I have learned that you can also make them larger in sandwich form, which works very well. Any way, shape, or form, these simple toasts are the best. The onions and mayonnaise melt together under the high heat of the broiler and taste delicious. They're a great nibble to serve to get your appetite going, and they couldn't be easier to put together. I like to use a sweet Vidalia onion if I can find it.
Ingredients:
5 slices sandwich bread (pepperidge farm white bread is best)
mayonnaise as needed
1 small vidalia or sweet onion, thinly sliced
Directions:
1. 1. Preheat the broiler.
2. 2. Toast the bread lightly in a toaster oven. Remove the crusts. Cut the slices with a 2-inch round biscuit cutter and spread the rounds lightly with mayonnaise. Put a slice of onion on top of each piece and spread with mayonnaise again. Broil until golden brown. Serve hot.
3. Ellen's Tips: You can add some chopped fresh parsley on top of the puffs after broiling. You can spread some hot and sweet mustard on top of the onion before the mayonnaise for a spicier version of this recipe.
