This dip is super easy when unexpected company pops in.
Ingredients:
2 cups onions, finely chopped
1 1/2 teaspoons extra virgin olive oil
1 cup sour cream
1 teaspoon paprika
salt and pepper to taste
Directions:
1. Cook onions in the EVOO for about 3 minutes, or until just soft.
2. In a medium bowl stir the onions, sour cream, paprika, salt and pepper until smooth.
3. Serve with fave veggies, chips, or crackers.
