A low calorie vegetable or vegetarian entree. Cut the slices in half for a warm first course or a 65 calorie snack
Ingredients:
1 cup egg substitute
1 cup skim milk
2 cups cabbage, cut in small pieces and blanched
1/2 onion, diced
1/2 cup parmesan cheese
1/2 cup cottage cheese
1 tsp marjoram
1 tsp basil
1 tsp salt
1/2 tsp pepper
Directions:
1. Blanche the onion in water.
2. Mix egg substitute and skim milk. Mix in the parmesan cheese, herbs, salt and pepper and the cottage cheese.
3. Put the cabbage in a 9 inch fluted quiche pan. Pour the custard over the cabbage. Bake the custard at 375° for about 30 minutes or until it is set
