Onion and Sweet Potato Burrito

I created this when I had some leftover onion and sweet potato frozen in the freezer and wanted to create something unique. I also may have added mushrooms if I had them on hand.
Ingredients:
2 tortillas
1 cup sweet onion
1 cup sweet potato
8 garlic cloves
2 tablespoons olive oil
1 teaspoon salt and pepper
4 tablespoons basil
1 tablespoon green onion
1/2 cup mexican cheese
2 tablespoons pecorino romano cheese
1/2 cup salsa
Directions:
1. First, cut up onion and potato into bite size pieces, then heat up olive oil in a fry pan, add in the garlic, onion, sweet potato, salt and pepper to taste. Cook until everything is soft.
2. Next prepare your tortillas, and put half of each onion, sweet potato, garlic mixture on each.
3. After that dice up your basil and green onion, and put half of that on each.
4. Sprinkle the romano cheese ontop of that, then add the mexican cheese and the Salsa on top of that.
5. Fold up and enjoy!
