Onion And Beet Salad

Delicious salad. One can cook beets by any method and follow remainder of recipe instructions
Ingredients:
2 1/2 lbs beets, peeled and halves
5 tbs olive oil divided
1 large red onion chopped
1/2 cup aged balsamic vinegar
1/3 cup red wine vinegar
1/4 cup sagar
1 tsp salt
1 tsp dried basil
1/4 tsp black pepper
Directions:
1. Place beets in plastic bag with 2 Tbs oil.
2. Shake to coat.
3. Place a sheet of foil in a 10 x 15 baking pan.
4. Arrange beets on foil and cover with more foil and seal edges.
5. Bake 400F about 1 to 1 1/4 hours or tender.
6. Cool to room temp.
7. Cut beets into cubes.
8. Add onions.
9. Whisk vinegar, sugar, salt, pepper, basil and remaining oil.
10. Pour over beets.
11. Toss to coat.
12. Chill at least one hour
