My advice for the beginner: don’t use poor quality cheese or frozen veggies on this one, or any recipe for that matter. Remember, you can’t make chicken salad from chicken poo.
Ingredients:
1 tablespoon minced fresh garlic.
1-1/4 pounds boneless, skinless chicken breast, cut into 1 inch cubes
2 cups fresh bite size broccoli florets
1 cup oil packed sun dried tomatoes, drained, julienne, reserve 1 tablespoon of the oil.
1 cup chopped fresh roma tomatoes
1 tablespoon crushed red pepper flakes (optional, i like it hot)
1 cup freshly grated mozzarella cheese (buy good cheese and grate it yourself, there is a difference)
1/4 cup freshly grated parmesan cheese (not the stuff in the green can, grate some fresh off of a block yourself, you will be pleasantly rewarded for your effort)
Directions:
1. Preheat broiler while cooking per the following directions
2. Heat the tablespoon of oil reserved from the sun dried tomatoes over medium heat
3. Add garlic and sauté for 1 minute
4. Add the chicken and cook about 5 minutes until lightly browned on all sides
5. Add fresh and sun dried tomatoes, broccoli, and crushed red pepper flakes, partially cover skillet and cook about 5 minutes until the fresh tomatoes start to break down and chicken is cooked through.
6. Remove from heat, top with the cheeses, place under preheated broiler until the cheese just starts to brown and is bubbly, about 2-3 minutes
7. Serve immediately
