Middle eastern, one-pot dish which has fed the famished in our family and saved our sanity on occasion - it's that darn nice. Based on One pot spiced rice and lamb from Burke's Backyard (Australian TV series)
Ingredients:
1 large red capsicum, finely chopped
1 large onion, finely chopped
2 garlic cloves, finely chopped
2 tablespoons olive oil
500 g lean lamb, cut into small strips
2 tablespoons pine nuts
300 g basmati rice
1/2 cup raisins
1 tablespoon cinnamon
1 tablespoon paprika
1 pinch white pepper
1 chicken stock cube
1/2 liter water
1/2 cup coriander leaves, chopped
2 tablespoons lemon juice
Directions:
1. Chop finely the flesh of the capsicum, onion and garlic.
2. Add oil to large pot, heat, then brown lamb mince.
3. Stir in capsicum, onion and garlic.
4. Add pine nuts, rice, raisins, cinnamon, paprika, white pepper and crumbled stock cube.
5. Stir.
6. Add water to cover mix.
7. Cover and cook on low for 15 minutes.
8. Add coriander and lemon, stir and serve.
