Having leftover pie crust in the freezer and some apples, I made this for some friends. You can serve it room temp but It is really best served chilled and the custard and pie is firm making for easier cutting and serving
Ingredients:
1 single pie pastry for 9 inch pie tin ( i used aluminum since i will give to a friend and don't worry about getting my tin back ! )
4 large apples peeled and sliced for pie
1 cup sugar ( splenda for baking works great here too )
1 cup half and half ( whole milk for less rich pie )
1/4 cup flour
1 tsp cinnamon or apple pie spice
butter
Directions:
1. Peel, slice apples and set aside.
2. Mix together flour, sugar and cinnamon.
3. Pour over apples and mix well.
4. Place apples in your pastry lined pie tin ( prick bottom of pastry with fork ).
5. Sprinkle on evenly the leftover flour mix that you mixed in with apples .
6. Dot with some butter.
7. Pour on the half and half.
8. Bake middle oven rack about 45 minutes or until apples are tend erand custard appears set.
9. Try not to overbake pie or custard could ge overdone
10. Use foil or a pie crust shield to prevent over browning of crust edges.
11. Cool completely on rack
12. Chill well and serve with ice cream or whipped cream if desired.
