This Kosher cake makes a tasty Rosh Hashana Cake, and is delicious with jam.
Ingredients:
1 cup sugar
4 cups flour, sifted
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon clove
1 teaspoon nutmeg
1 cup honey
1 cup coffee, cooked
3/4 cup oil
1 teaspoon vanilla
3 eggs
1/2 cup raisins
1/2 cup walnuts, chopped
2 apples, peeled, cored, and sliced
Directions:
1. Sift all dry ingredients into a large bowl, stir together. Make a well and add all the liquid ingredients. Add raisins, nuts, and apples.
2. Spray a round tube pan with oil and bake at 350 degree oven for 45-60 minutes until a toothpick or knife comes clean.
