This is another recipe I have had for years. I clipped it from the newspaper. It goes together quickly and easily. Don't be alarmed by the consistency of the batter. It is supposed to be runny. I like to serve a slice of this cake drizzled with warm chocolate sauce and topped with whipped topping. It really is worth trying IMHO. (I have excellent written on my clipping...)
Ingredients:
1 1/2 cups brown sugar
1/2 cup vegetable oil
1/2 cup milk
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 3/4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 cup cocoa
3/4 cup boiling water
Directions:
1. Preheat oven to 350*. Grease and flour a 10 tube or bundt pan.
2. In a large bowl, beat all ingredients EXCEPT boiling water together. You can use your mixer, but it's just as easy to use a wooden spoon or whisk.
3. Add the boiling water and mix well.
4. Pour batter into prepared pan.
5. Bake 350* for 30-40 minutes, until cake springs back when pressed lightly.
6. Cool in pan 10 minutes, then remove from pan to wire rack to cool completely.
7. You can serve this plain, dusted with icing sugar, your favorite icing or drizzled with warm chocolate sauce.
