I wanted taco soup and had a few recipes but all of them called for some ingredient I didn't have on hand. I improvised and came up with this and I don't think I'll make taco soup any other way! The whole time my husband and I were eatting this we kept saying Oh my gosh this is so good! So we call it OMG Taco Soup. We served it with lime flavored tortilla chips and low fat shredded chedder cheese. Note:you can use Italian style tomatoes in place of Mexican stlye.
Ingredients:
1 lb ground beef
1/4 cup onion, chopped
1 (15 ounce) can white beans
1 (15 ounce) can kidney beans
1 (15 ounce) can mexican-style stewed tomatoes
1 (15 ounce) can diced tomatoes
1 (4 ounce) can green chilies
1 (1 ounce) packet taco seasoning
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1 cup water
1/4 teaspoon dried oregano, crush
3 dashes tabasco sauce
2 -3 dashes paprika
1 -2 dash cayenne pepper
tortilla chips
shredded cheese (chedder, or montery jack cheese)
Directions:
1. In a large soup pot or sauce pan brown ground beef.
2. Add onion to the ground beef and saute about a minute or 2.
3. Add undrained canned tomatoes, beans, and green chilis. Don't drain any of the canned stuff, just dump it all inches.
4. Add taco seasoning, garlic powder, cumin, chili powder, oregano, paprika, tobasco, cayenne and water. Stir to combine well and let simmer for at least an hour over low heat, stirring occasionally.
5. To serve, put some chips in a bowl, spoon soup over the chips and top soup with cheese.
