To make a good Omelette,you just have to break some eggs.
Ingredients:
melt some butter in a frying pan,then turn down the heat to low or medium low.
breat 3 or more good fresh farm eggs(love the yolk on these),in a bowl.
do not add any salt as the salt breaks down the albumen content and spoils the omelette.
beat the eggs with an egg beater or pastry whip,and without one pause in the beating,pour into your frying pan.
getting them into the pan as quickly as possible, so as not to separate, even slightly.
cook slowly.
turn if desired,then salt and pepper to taste when served.
top with your favorite things.
