Olive tapenade is a thick dip or spread similar in consistency to pesto, but made from olives, capers, lemon juice and herbs. There's usually some anchovies in there too, but who wants to eat fish and olives in the same bite? Yuck! Ingredients:
1/2 cup sliced kalamata olives
1/2 cup chopped roasted red peppers
1 tbsp capers (optional)
3 cloves garlic, minced
2 tbsp lemon juice
1/4 tsp dried basil
1/4 tsp dried parsley
1/4 tsp dried thyme
2 tbsp olive oil
Directions:
1. Process all ingredients in a food processor, pulsing just until coarse and minced fine. Serve your olive tapenade with crackers or toast points.
