Olive Oil Glazed Potatoes

Oh so easy and quick. Heres a very basic potato recipe that can be dressed up in many wany if you feel it's to plain.
Ingredients:
1 lb russet potato (peeled or not as you prefer)
1 1/4 cups water
2 tablespoons extra virgin olive oil
1 garlic clove, minced
1/2 teaspoon salt (optional)
Directions:
1. Combine potatoes with water, oil, garlic, and salt in a 10-inch nonstick skillet and bring to a simmer.
2. Cover skillet and briskly simmer, shaking skillet occasionally, until potatoes are tender and most of water is absorbed, 10 to 12 minutes.
3. Serve.
