Bon Apetite, from Manhattan's Abraco Coffee Shop comes this readers request for this sweet, olive oil flavored loaf. The ingrdients listed were oganic but I adapted and used what I had in the cupboard! After I tasted it, i think next time some finely chopped nuts or dried fruit ( ex dreid cranberries ) may be a nice addition to the recipe
Ingredients:
1 1/2 cups flour
1 cup sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 large eggs
3/4 cup whole milk
1/2 cup light or mild olive oil
2 tsp grated orange zest
Directions:
1. Whisk first 5 ingredients together
2. Whisk eggs,oil, milk and zest in another bowl
3. Whisk both mixtures together to combine
4. Transfer to a oiled 9 x 5 inch loaf pan
5. Bake in a 350F oven 45 to 60 minutes or until tester comes out clean in center
6. Cool in pan 20 minutes and remove to rack to cool
7. Wrap and foil and let mellow 1 day at room temperature
