Olive Oil and Garlic Oven Fries

This is a great healthful alternative to the deep french fried potatoes. They are great dipped in a fresh garlic sauce.
Ingredients:
4 -5 idaho potatoes
1/8 cup olive oil
1/2 tablespoon sea salt
1/2 teaspoon fresh ground black pepper
2 large garlic cloves
2 tablespoons water
1/4 teaspoon salt
Directions:
1. Preheat oven to 450 degrees.
2. Peel and cut each potato into thick fries and place in a bowl of cold water. This will allow the potatoes to stay nice and crisp. When all potatoes are sliced, remove from water and pat dry with paper towels. Place in a bowl and toss with the olive oil and salt and pepper according to taste.The amount of salt used depends on the size of the potatoes and personal preference.
3. Lay out in one layer on nonstick cookies sheets. Cook for 30 minutes, turning frequently until golden brown.
4. For the garlic sauce.
5. Peel and finely chopped the garlic cloves. On the cutting board season with a 1/4 tsp of salt and mash with the wide side of the knife. Once the garlic is almost a paste, place is a small bowl and add 2 tablespoons water. Mix well. This fresh garlic sauce can be used to dip the oven fries in or it can be poured over the potatoes once they are served.
