If you're planning a party buffet be sure to put these mini muffins on the menu. They're a perfect alternative to bread on a cheese tray, or fill a small basket and serve on their own. These savoury muffins are easy to make and gently flavored with olives, fresh rosemary and Parmesan cheese - in a word - Delicious!
Ingredients:
2 cups all-purpose flour
1 cup parmesan cheese, grated
2 tablespoons granulated sugar
1 tablespoon baking powder
1 tablespoon fresh rosemary, chopped
1 egg
1 cup evaporated milk (carnation)
1/4 cup canola oil or 1/4 cup vegetable oil
1/3 cup olive, chopped
1/2 cup grated parmesan cheese
Directions:
1. Preheat oven to 375°F Grease mini muffin cups.
2. Combine first 5 ingredients in a medium sized bowl. Stir well. In another bowl, whisk together egg, milk and oil. Pour into dry ingredients and stir just until moist. Add olives. Stir to combine.
3. Spoon batter into prepared muffin tins. Sprinkle with remaining 1/2 cup Parmesan cheese. Bake in preheated oven for 15 minutes, or until a toothpick inserted into center of muffin comes out clean.
