Delicious olive spread - great with a loaf of crusty Italian bread! If you want, you can add roasted red pepper, cannellini beans and whole sun-dried tomatoes at the end of the recipe for a complete antipasto.
Ingredients:
1 cup pitted black olives
2 garlic cloves, minced
1 tablespoon capers
1/3 cup extra virgin olive oil
1 teaspoon lemon juice
1/4 cup fresh parsley
1/4 cup sun-dried tomato
fresh ground pepper
cayenne pepper
Directions:
1. Combine in a food processor and serve. Garnish with fresh herbs such as thyme, basil or oregano.
