Old World Roast Goose With Potato Stuffing

Ingredients:

  • 1 large goose
  • 6 slices salt pork
  • 1 cup water
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1/4 cup salt pork
  • 1/4 cup butter
  • 1 tsp salt
  • 1/2 tsp sage
  • 1 egg

Directions:

  1. Wash the goose thoroughly in cold water and wipe dry.
  2. Salt and pepper outside of goose.
  3. Begin assembling your stuffing.
  4. Hot mashed potatoes.
  5. Butter.
  6. Egg.
  7. Salt.
  8. Onion juice.
  9. Sage.
  10. Crumbs pork.
  11. Mix thoroughly.
  12. Stuff goose with stuffing mix and truss.
  13. Pin pork strips to breast of goose with tooth picks.
  14. Place goose breast up in broiler pan.
  15. Add water to bottom of pan.
  16. Place in a preheated 350 degree oven for 2 1/2 hours.
  17. Remove pork strips for the last 30 min of cooking.
