I'm still looking for the perfect tapioca pudding - I hope this is it.
Ingredients:
2 tablespoons butter
1/2 cup tapioca, 1/8 inch wide
4 cups milk
1/4 cup sugar
1 cinnamon stick
1 lemon, zest of, freshly grated
Directions:
1. Melt butter in a saucepan and add tapioca pearls. Cook for 2 minutes.
2. Add milk, sugar and cinnamon stick.
3. Simmer, stirring occasionally, until the tapioca is translucent and soft, 30 to 40 minutes.
4. Stir in lemon zest.
5. Serve warm or cold.
