Recipie has been in family for years I remember my mother baking this and making the house smell yummy.
Ingredients:
2/3 cup crisco shortning
2 2/3 cup sugar
4 eggs or egg substitute
1 lb canned pumpkin
2/3 cup orange juice /or substitute water (for diabetics)
3 1/3 cup flour
1/2 tsp baking powder
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp ground cloves may be omitted if desired
2/3 cup nuts if desired (walnuts or any other)
2/3 cup raisins or dates chopped
Directions:
1. Soak raisins over night in water or orange juice
2. Prepare batter when raisins are ready after soaking
3. Mix raisins into batter when ready
4. Lightly spray or grease your pans I use non stick muffin tins
5. Fill about 3/4 full
6. Pre heat oven to 350 degrees
7. Bake at 350 for 1 hour or until tooth pick comes out clean.
8. Let cool for apprx. 1/2 or serve at your desired temperature and enjoy.
9. Serve with Butter if desired.
