Old Fashioned Jelly Roll

Special day cake with unique mixing method, followed by quick baking in specially prepared pan, which results in the perfect jelly roll.
Ingredients:
3/4 cup sifted cake flour (sift first, then measure)
3/4 teaspoon baking powder
1/4 teaspoon salt
4 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup jelly, any flavor
powdered sugar
Directions:
1. Sift flour once, then measure. Set aside.
2. Combine baking powder, salt, and eggs in bowl. Place over smaller bowl of hot water and beat with rotary egg beater, adding sugar gradually until mixture becomes thick and light colored.
3. Remove bowl from hot water. Fold in flour and vanilla.
4. Turn into a 15x10in jelly roll pan that has been greased, lined with wax paper, then greased again on top of the wax paper.
5. Bake in a 400 degree oven for 13 minutes.
6. Quickly cut off crisp edges when you remove from baking.
7. Turn from pan at once onto cloth covered with powdered sugar. Remove wax paper and spread with jelly, spreading almost to edge.
8. Roll quickly. Wrap in cloth and cool on rack.
9. Cut when completely cool and sprinkle with powdered sugar.
