Gone are the good ol' days when the cookie jar was always full. These are a kick-back to those times and a cookie my grammy used to make.
Ingredients:
3-1/2 cups all-purpose flour
2 cups butter, softened
1 cup granulated sugar
1 cup firmly packed brown sugar (very important to pack)
1 large egg
1 teaspoon baking soda
1/2 teaspoon salt
1 cup toasted rice cereal (you can use generic)
1 cup quick-cooking oats
1 cup flaked coconut, optional
1/2 cup chopped cashews, optional but worth it
Directions:
1. Heat oven to 350°.
2. In a large bowl, combine flour, butter, sugar, brown sugar, egg, baking soda and salt.
3. Beat at low speed, scraping often, until well mixed. About 3 minutes.
4. By hand, stir in rice cereal, oats, coconut if using, and cashews.
5. Drop dough by rounded tablespoonsful 2-inches apart onto an ungreased cookie sheet(s).
6. Bake 13-18 minutes until lightly browned.
7. Watch them carefully because they can burn quickly if not tended to.
8. Remove from oven and place onto racks to cool.
9. Store any un-eaten portions in a tightly sealed container with slices of inexpensive white bread to keep them soft.
