Old Fahioned Apple Pie

Very cool here in New England and what better time to make a good old fashioned apple pie and such aroma wafting from the oven ! Sometimes basic is best ! Omit raisins if you wish
Ingredients:
favorite pie pastry recipe for double crust
8 medium apples
1/2 cup sugar
2 tbs flour
1 tsp cinnamon
1/8 tsp nutmerg
1/4 cup raisins ( dark or light - optional )
zest and juice from 1/2 lemon
cream for top crust
sugar for top crust
nutmeg for top crust
Directions:
1. Peel, slice apples for pie
2. Mix together the sugar, flour, cinnmaon and nutmeg
3. Add apples and raisins and toss to mix
4. Squeeze on lemon juice with the zest and toss again
5. Place apples evenly into a 9 or 10 inch pie pastry lined pie plate
6. Add top crust and slash deeply in a few places
7. Brush with cream and sprinkle with some sugar and a bit of fresh grated nutmeg
8. Bake 425F for 15 minutes
9. Lower heat to 375 and bake 45 minutes more or until pie is golden and juices start to bubble up
10. Cool on rack; may serve warm, chilled or room temp
11. Note: if using pyrex, decrease the oven heat by 25 F for the oven temps listed with the recipe
12. Pie freezes well too
