I know there are a lot of good, easy, and quick chess pie recipes, but I think this one is my favorite and you don't even have to use a mixer. This recipe comes from The Old Country Store in Jackson TN and we've been making it in our family for at least 30 years. I've used 1.5% milk and apple cider vinegar when that's all I had on hand and you can't tell a difference at all.
Ingredients:
1 1/2 cups sugar
1 1/2 tablespoons flour
1 1/2 tablespoons meal
1 teaspoon vinegar
1/4 cup milk
3 eggs
1/2 cup butter, melted
1 teaspoon vanilla
1 uncooked pie shell
Directions:
1. Preheat oven to 350 degrees.
2. Beat eggs.
3. Add sugar, flour, and meal to eggs, stir.
4. Add vanilla, vinegar, and milk.
5. Lastly, add the melted butter. Stir all ingredients well using a whisk.
6. Put into unbaked pie shell. Bake at 350 degrees for 45-50 minutes until firm in the middle.
