No house in New Orleans goes without a recipe for okra ( a developed taste I must admit) This goes great with Oven Pork Chops Enjoy!
Ingredients:
one 16 oz frozen crawfish tails ( available everywhere ) defrosted
2lbs okra ( fresh or frozen or for the faint of heart canned0 chop okra into little slices
1 ounce of olive oil
1.2 cup sausage of choice chopped
1 large onion
1 stalk celery
2 tablespoopns garlic
2 tomatoes chopped ( fresh)
1 tablespoon basil
1 tablespoon black or red pepper
1 teaspoon salt i use sea salt
1/2 cup green bell pepper (chopped)
Directions:
1. Cook okra down in oliive oil until the slime decreases
2. Add sausage and cook for 15 minutes stirring occasionaly
3. Now add seasonings to the mix
4. cook till onions start to gloss.
5. Add crawfish tails, salt.pepper and basil and cook for another 10 minutes
6. Add tomatoes and cook till all ingredients are done
7. I serve this with my Oven baked pork chops and creamy mashed potatoes with garlic
8. Have a glass of wine on me
9. Enjoy!
