Pilau (pih-LOW) is a coastal South Carolina dish that consists of long-grain rice and usually some sort of meat or seafood.
Ingredients:
8 slices bacon, diced
1 1/2 cups sliced fresh okra
1 large onion, chopped
1 green bell pepper, chopped
1 1/2 cups uncooked long-grain rice
salt (to taste)
1/2 teaspoon pepper (to taste)
2 cups chicken stock or 2 cups water
Directions:
1. Fry bacon in a large non-stick skillet until it is crisp; transfer bacon to a paper-towel lined plate to drain; discard all but 2 tablespoons bacon drippings from skillet.
2. Cook okra, onion, and bell pepper in hot bacon drippings over medium-high heat for 5 minutes or until tender, stir frequently.
3. Add in rice and remaining ingredients; bring to a boil.
4. Cover, lower heat, and simmer 20 minutes or until water is absorbed and rice is tender.
5. Take skillet off burner; add in bacon, stir to combine.
6. Let sit 5 minutes.
