Okra Fry

A nice and popular side dish for any party!
Ingredients:
1 kg okra
2 -3 tablespoons thick plain yogurt
2 tablespoons chickpea flour (besan)
1 tablespoon red chili pepper
1 tablespoon garam masala
salt
oil (for frying)
Directions:
1. Wash and dry the okra.
2. Cut of the stem.
3. Shred the okra Length-wise (4 Shreds per okra Minimum).
4. Dry the shredded okra.
5. Add all the other ingredients except oil and mix thoroughly.
6. Note that the individual shreds should get coated by the mixture.
7. Ensure that the coating is thick and is not running at all.
8. Heat oil in a wok.
9. Fry okra in hot oil in small batches.
10. Fry till brown.
11. Remove excess oil by draining on paper towel.
12. DO NOT COVER AT ALL.
13. Serve along with rest of the dishes in a flat salad or rice serving tray.
