I love okra and found this recipe that has all of the wonderful flavors that complement it so well.
Ingredients:
1/4 cup rice
4 cups sliced okra (frozen ok if fresh is not available)
4 cups diced tomatoes (canned diced ok)
1/2 teaspoon salt
pepper to taste
1/4 teaspoon curry powder (can substitute cajun seasoning)
1 tbsp butter
Directions:
1. Place rice in buttered baking dish
2. Add okra and tomatoes
3. Season with salt, pepper and curry powder
4. Dot with butter
5. Bake covered in 325 degree oven for 45 minutes or until rice is tender.
6. Remove cover and bake until it is browned.
