This recipe is simple and has ingredients you probably already have. The big plus is that you can put it in the pot and finish preparing the rest of your meal without taking up oven space.
Ingredients:
1 - 8-inch pan of prepared cornbread, made with oklahoma's own shawnee mills white cornmeal or cornbread mix (www.shawneemilling.com)
2 1/2 cups bread crumbs
1 cup chopped celery
1 medium onion, chopped
1 1/2 tbs. sage (i use rubbed sage)
1/2 tsp. black pepper
1 tsp. salt
2 cans cream of chicken soup (i like 1 chicken, 1 mushroom)
2 cans chicken broth (i use better than bouillon)
4 eggs
4-5 tbs. butter
shredded turkey or chicken may be added
Directions:
1. Crumble cornbread into crock pot and add bread crumbs, mix.
2. Combine remaining ingredients, except butter, in a large bowl.
3. Pour into crock pot, mix well.
4. Dot top with butter.
5. Cover and cook on high for 2 hours or on low for 4 hours on high, approximately; stirring around sides and bottom once or twice to insure even cooking.
6. As always, adjust spices to your liking. Have fun with it!
