Oil - Free Scallop Ceviche

Something special for the summer, without the oil!
Ingredients:
1 1/2 tsp ground cumin
2 tsp lime zest
1 1/4 cup fresh lime juice
1/4 cup orange juice
2 lb bay scallops
2 jalapeno peppers, finely chopped
1/4 cup red onion, finely chopped
3 plum tomatoes, seeded and chopped
1 red bell pepper, seeded and chopped
3 green onions, chopped
1/3 cup chopped fresh cilantro
Directions:
1. Stir the cumin and zest into the lime and orange juices and pour over the scallops.
2. Stir in the chopped jalapeno and red onion.
3. Cover and refrigerate for at least 2 hours.
4. Just before serving, drain the scallops and mix with the chopped tomatoes, bell pepper, green onions and cilantro.
