Official Nanaimo Bar Recipe by Joyce Hardcastle
Ingredients:
1/2 cup unsalted butter (european style cultured)
1/4 cup sugar
5 tbsp cocoa, dry powder
1 egg
1 1/4 cups graham crumbs
1/2 c. chopped almonds
1 cup coconut
1/2 cup unsalted butter
2 tbsp. cream
2 tsp. cream
1 oz vanilla custard powder
2 cups icing sugar
4 oz semisweet chocolate
2 tbsp. unsalted butter
Directions:
1. Bottom Layer
2. 1/2 cup unsalted butter (European style cultured)
3. 1/4 cup sugar
4. 5 tbsp. cocoa
5. 1 egg beaten
6. 1 1/4 cups graham wafer crumbs
7. 1/2 c. finely chapped almonds
8. 1 cup coconut
9. Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 8 x 8 pan.
10. Second Layer
11. 1/2 cup unsalted butter
12. 2 Tbsp. and 2 Tsp. cream
13. 2 Tbsp. vanilla custard powder
14. 2 cups icing sugar
15. Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.
16. Third Layer
17. 4 squares semi-sweet chocolate (1 oz. each)
18. 2 Tbsp. unsalted butter
19. Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.
