Oatmeal Waffles

This is my favorite waffle/pancake batter ever! It's also healthy and low in fat. I like to make big batches and then freeze them for later.
Ingredients:
2 eggs or equivalent of egg beaters
2 c low fat buttermilk.
1 c quick cooking oats
1 t molasses
1 t oil
1 c whole wheat flour
1/2 t salt
1 t baking soda
1 t baking powder
Directions:
1. Combine: eggs, buttermilk and oats, mix well
2. Add in oil, molasses, stir (if you add the oil first the molasses will not stick to your measuring spoon.)
3. Add flour, salt, soda, baking powder and stir till all ingredients are combined
4. Pour batter into a preheated and greased waffle iron and cook per the manufactures directions. My waffle iron takes about 5 min a waffle to cook.
5. Or drop by 1/4 c fulls onto a heated griddle for pancakes and flip when bubbles from on top.
6. I like to make these in big batches and freeze for latter.
7. Serve with syrup, jam, applesause or fruit.
